TIPS

  1. Brine in Minute Maid lemonade (>18 hours for tenderness, >48 for lemon flavor).

  2. Let rub set for 30 minutes.

  3. Smoke for 2 hours at 225F (2.5-3 hours for whole chicken), sauce 30 minutes before removal.

  4. Use KitchenAid stand mixer, on lowest speed, to quickly shred smoked chicken breasts without burning yourself. Use the coated flat beater attachment (it's dishwashable along with the bowl).

  5. Add lemony, smoked chicken to chicken tacos with lime and cilantro.

  6. Use smoked chicken in chili (vacuum seal and refrigerate for 2 weeks for enhanced smokiness).

  7. Smoke chicken wings for Game Day.

FRIED CHICKEN & WAFFLES

  1. Trim and cut the chicken, e.g. butterfly, strips, or nuggets.

  2. Add 1/3 cup of any All-Purpose Rub to 1 cup of buttermilk.
    (Tip: Fire Tornado pairs well with hot sauce topping for Georgia Hot Chicken and Waffles.)

  3. Thoroughly submerge the chicken.

  4. Add chicken to flour and cover for 30 seconds.

  5. Fry chicken in hot oil.

  6. Make Georgia Toast Waffles

  7. Add your favorite topping, e.g. coffee smear, hot sauce, syrup, bacon, jam, etc.
