Ribs

  1. Remove white skin (cut over a bone, remove with paper towels).

  2. Brine, in Cherry Dr. Pepper, for 18 hours (24 hours for best results). Use Cherry Dr. Pepper or Barq's Root Beer for beef ribs.

  3. Apply rub (shake off excess) to meat side for 1 hour (24 hours for best results).

  4. Smoke at 225F.

    1. Start bone side down.

    2. At the 2-hour mark, flip over for bone side up.

    3. At the 3-hour mark, flip over for bone side down. Sauce (optional).

    4. At the 3.5-hour mark, apply more sauce (optional).

    5. At the 4-hour mark, remove from the smoker.

  5. Let set for 1-3 hours.

3-2-1 Method (standard)

This is the popular method. Let us know if you prefer this method or our house method.

    3. At the 5-hour mark, unwrap and apply the sauce (optional).

    4. At the 5.5-hour mark, apply more sauce (optional).

    5. At the 6-hour mark, remove from the smoker.

  4. Let set for 1-3 hours.
